Ube, pronounced as 'ooh-bae' is a purple yam native to the Philippines. Do not mistake it for taro, although both are root vegetables, ube has a sweeter, nutty and vanilla flavour. It is known for its vibrant purple colour and is primarily used in desserts. Not only is it delicious but it is also a great source of fiber and antioxidants, especially anthocyanins which helps fight inflamation!
